About Dough School
Dough School is a free, 100-level baking curriculum that takes you from your first accurate measurement to designing your own formulas. Ten chapters, one hundred lessons, zero cost: first principles, leaveners, eggs and emulsions, crusts and fillings, yeast, enriched doughs, cake architecture, pastry mechanics, pâtisserie, and finally baking like a professional.
Every lesson follows the same structure: a weighed formula, a step-by-step method with "watch for" guidance on each step, a pro tip with the reason behind it, and the underlying concept so the technique transfers to the next bake. The order is deliberate — skills compound chapter to chapter — but you can also jump anywhere and bake what sounds good.
Dough School is run by Brendan O'Connor, a product manager who bakes. It exists because good baking instruction shouldn't hide behind paywalls or vague cup measurements. Everything here is free, and the goal is simple: that you finish the curriculum able to look at any recipe and know exactly what it will do.
Bake something worth sharing.
